What Is Saffron?

It’s a spice produced from the flower stigmas (thread-like parts) of Crocus sativus, a fall-flowering plant, and an iris family member. It’s a labor-intensive crop. Making the spice entails picking three stigmas from each flower, spreading them on trays, drying them over a fire, and grinding them for use in coloring and flavoring food.
